Tonx & Good Art

Start every morning in the Tonx. No not the Bronx I said Tonx. Tonx coffee is how this artist starts every day and it just isn't a good day without it. I was a hard brewed Starbucks junkie. Now I know what REAL coffee is SUPPOSED to taste like. Tonx does the body...actually nothing does the body good but the state of euphoria I get from Tonx coffee has got to be good right? It used to be a trip to Starbucks every morning to wake, get up and get going. I thought Starbucks was the end all be all coffee. Uh no. I didn't realize what muck it REALLY was until I found out that the end all be all OMGorsh coffee is made in your own dragons den. First it consists of Tonx that is delivered right to your door. Ok the mail box really but if you cant walk your butt to the mail box then you have issues like me. I will explain choosing Tonx later.  Next you should have a grinder that allows you to adjust the grind of your coffee. Why? Because I bloody said so. Stop asking questions. Ok you didn't believe that last statement did you? Always ask questions as a matter of fact question everything, You will remain a zombie AND an idiot if you don't.  You want to be able to adjust the grind of your coffee based on how Strong roasted the coffee VS. how green the coffee is. The interesting thing is you will develop a nose for this over time. I can now smell my Tonx coffee and tell right away which way I should grind it.

How do you develop a nose for coffee? Didn't I tell you to stop asking questions? Ha! That was a test. You passed right? You develop the nose for coffee by first starting with taste. If as a beginner you were to start every bag of Tonx coffee by grinding it in the middle of the settings (hint), after brewing you would be able to taste if the coffee has a more bitter/strong flavor or a more sour flavor.  Or was it just right? Because sometimes that can be the case too. Depending on how the coffee tastes will determine how you would brew the next cups of Tonx.

Here is how to fix it if it tastes sour to you. To allow more soluble coffee particles to be extracted into your cup, you're going to have to get more out of them either with time (letting it steep more) or grind. Particle size determines exactly how your coffee will extract, so a grind size that's large will require more extraction time than a grind size that's finer.  Make sense? Bring your grind down a bit and try again. If it was Super sour bring it down about a 1/4 more.

Here is how to fix it if it knocked those not so fresh socks off your feet. Just like in under-extracted coffee, the simplest solution is to attenuate your grind. In this case, coarsening your grind will slow the process of extraction and allow you to find the right balance of flavor.

These are immediate basic solutions as brewing times can also make a difference and change your flavors. However since we use an AeroPress it is easy to adjust brewing immediately by what you smelled or have tasted previously.  After a while and a bit of experimenting you will be able to open your new flippin awesome delivery of Tonx coffee and by smell alone be able to determine how you should grind it. The cool thing is that Tonx brings you beans from all over the world and a different type every shipment. Each type is resonant just like wine of the things that grow in the area/ground of the particular bean. This last shipment has elements of florals, stone fruits, pears, toffee, lavender and rose. Trust your nose. If the beans have a sour note to it and it tasted sour after you brewed it, it correlates.  What's that saying? The nose knows? Yep it does. Even this nose that needs an operation can detect it.  I have developed my nose to point where I can now detect the delicate nuances in the bean. It didn't take long either a couple of bags later and because my mind is open to it so is my nose.


Now I know you were asking above; whats an AeroPress? Good job you are a pro at asking questions now. Yep great coffee maker. You do it by hand and it makes one to two cups depending on what you are doing with it. Here's the link to find one. https://tonx.org/store/aeropress


The AeroPress is what we use with our perfectly ground coffee. Let me also say this. Our fall back coffee is Dunkin Donuts. It really is very good coffee. I have tried MANY types of coffee from Starbucks and not only are they way overpriced that actually are mostly terrible. I may find one good type every other year out of ten to twenty trials. So the things I stick to at Starbucks is the Passion Tea Lemonade and Chi-Tea. Now those ARE good. 
Not to say every bag of Tonx is phenomenal because they are coming from different parts of the world and different coffee bean farms. However I will say every single bag of Tonx has been better then anything else I have ever bought and would have no problem putting it up against anyone else. Interestingly enough there is a Retreat of Monks near me that sell some really good coffee too. If you would like to try a bag of that let me know.
